Arroz con Leche

Ingredients

  • 1 cup arborio rice
  • 4 cups milk (I used whole, but I think 2% would work)
  • 6 tablespoons granulated sugar
  • 1 cinnamon stick
  • pinch of ground cloves
  • zest of 1 orange
  • 1 teaspoon vanilla extract
  • ground cinnamon, to serve (optional)

Instructions

  1. In a 2-quart or larger pot, add the rice, milk, sugar, ground cloves, cinnamon stick and orange zest. Simmer on medium-low heat, stirring often, for 30-40 minutes, until the pudding has thickened. I’d leave it a bit looser than you’d want, since the arroz con leche thickens as it cools.
  2. Stir in the vanilla extract. Spoon the rice pudding into cups and top with a pinch of ground cinnamon. Serve warm.
