Ingredients
- 3 very ripe bananas
- 3/4 cup all-natural unsweetened peanut butter
- 1/2 cup roughly chopped almonds
- 1/2 cup roughly chopped walnuts
- 1/4 cup unsweetened shredded coconut
- 2 tablespoons ground flaxseed
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 cup dried cherries (or cranberries or blueberries or raisins)
- 1–1/2 cups old-fashioned oats
Instructions
- Preheat the oven to 350F. Grease an 8-x-8 or 11-x-7 pan with oil (or you can line with tin foil, leaving an overhang on the edges, for easy removal of the bars).
- In a large bowl, mash the bananas to a smooth consistency, then stir in the other ingredients until thoroughly combined. Transfer the batter to the pan and spread in an even layer.
- Bake for 20-25 minutes, until the edges are golden and the granola bars are set in the middle. Cool completely before cutting into slices (I found it easiest to do this by sticking the bars in the freezer for an hour, then slicing them). Tightly wrap the individual bars in plastic wrap to transport easily / keep them from drying out.
