Ingredients
- 1 large onion, chopped
- 5 cloves garlic, minced
- 1 red bell pepper, diced
- 1 jalapeño, seeded and diced
- 1/2 teaspoon paprika
- 1/2 teaspoon cumin
- 1 8-ounce can tomato sauce
- 2 15-ounce cans black beans, rinsed and drained
- 2 cups brown rice, cooked
- salt and pepper to taste
Instructions
- Saute the garlic and onions in olive oil on medium-high heat until slightly browned. Add the bell pepper, jalapeño, cumin and paprika and cook for 2 minutes. Add the tomato sauce and cook for 5 minutes more.
- Add the beans and simmer on medium-low heat for 5-10 minutes. Season with salt and pepper. Add the rice and mix well. Garnish with chopped cilantro if desired.
