Ingredients
- 3 cups all-purpose flour
- 1/3 cup sugar
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 2–1/2 teaspoons baking powder
- 12 tablespoons (1–1/2 sticks) unsalted butter, cut into chunks
- 1 cup buttermilk
Instructions
- Mix the flour, sugar, salt, baking powder and soda in a large bowl. Add the butter and using your fingers, combine to make a coarse meal.
- Add the buttermilk and mix just to combine. If you’re using zest, fruits, nuts, etc., add now. The dough will still be crumbly and will not come together.
- On a lightly floured surface, bring together half of the dough and form into a disc. Using a rolling pin, shape the dough into a circle that is about 3/4 of an inch thick. Cut into 8 wedges. Repeat with the second half of the dough.
- Place the scones on a baking sheet. Brush a little buttermilk (or heavy cream) onto each scone, then sprinkle with sugar. Turbinado (or Demerara) works great, if you have it.
- Bake at 400F for 15-17 minutes, until the scones are lightly browned. Try not to eat them right off the baking sheet.
